Salty Pearls are manufactured using Webb's Seafood proprietary process to reduce vibrios in oysters. This process reduces the Vibrio vulnificus and Vibrio parahaemolyticus to non-detectable levels (in accordance to the ISSC and U.S. FDA) while maintaining the sensory characteristics of a fresh harvested product. Our secret is a combination of mild heat treatment followed by shucking and immediate cooling of the oyster finished by a cryogenic IQF freezing to sealed-in all the flavors. All our oysters have a protective glaze to ensure a long shelf-life without any freezer burn or other potential problems during storage.
